A chef who shops before she cooks
Sage Whitman grew up in Fort Collins and came back to Colorado after stints in San Francisco and Portland, specifically because she wanted to cook with the Flatirons out the window and the Boulder Farmers' Market two blocks from the kitchen door.
She opened Wildflower in 2014 with 36 seats, a blackboard menu, and a promise to herself: if it doesn't come from Colorado, it doesn't go on the plate. A decade in, the rule has held. The sourcing list runs to thirty farms from Longmont down to Palisade. The menu still changes every week.
Dinner service Thursday through Sunday. We don't do lunch, we don't rush service, and we don't take reservations more than two weeks out. Come to the Pearl Street Mall, turn west on 17th, and look for the window boxes full of wildflowers we grow ourselves out front.
